Shelf-life

The majority of dried fruits are able to be stored for up to a year when kept at 60 degrees F. Vegetables only have half the shelf-life of fruits. Foods that are packaged apparently totally dry can spoil if there is any moisture reabsorbed during storage, so dried fruit in storage need to be checked frequently.

Preservation

Sulfur dioxide is often used as a preservative, not just in dried fruits, and also in many grapes. Sulfur dioxide is judged to be quite safe, but some people can be sensitive to it and therefore might develop symptoms of asthma.
